Between pita full of flavors, aromatic carrot bread and tempting oat bread, we have prepared the perfect line-up for a festive day out. Each sandwich is ready to add charm and pleasure to any picnic and upgrade the culinary experience in nature.
Carrot bread sandwich:
- 2/3 carrot (250 grams)
- 80 grams oat flour
- 2 EGGS
- Salt
- pepper
- 1 teaspoon of oregano
- A pinch of paprika
- A pinch of curry
Ingredients To fill:
- Yellow cheese or pastrami
- Salad leaves or spinach
- Avocado
Instructions:
- Grate the carrots, put them in a bowl and mix with oat flour, eggs, salt, pepper and spices. Be sure to mix well until the mixture is smooth.
- Pour the mixture into an oiled square pan. You can cook the bread in the microwave at high power for one minute and 40 seconds.
- Carefully remove the bread from the microwave and remove it from the pan. Divide the bread in half.
- Heat the oven to 190 degrees.
- Put cheese or pastrami on half the bread, some leafy salad or spinach, three pieces of avocado and more cheese or pastrami.
- Put the other half of the bread on top and roast the sandwich in the oven for three minutes.
Beef fillet sandwich:
Ingredients for pita
- 1 cup of water
- 1 and ½ teaspoons of yeast
- A pinch of brown sugar
- 360 grams of flour
- 2 tablespoons olive oil
- 1 teaspoon of salt
To fill:
- 160 ml olive oil
- 80 ml of vinegar
- Salt
- black pepper
- 500 grams of beef fillet
- 1 teaspoon cumin
- 1 teaspoon of turmeric
- 2 teaspoons of paprika
- 1 teaspoon cardamom
- ½ teaspoon of cinnamon
- 1 onion
For the sandwiches:
- red onion
- coriander
- mint
- Lemon / lime
- Cherry tomatoes
- cucumber
- Tehini
Instructions:
- To prepare the pita: heat water until it is at a warm temperature and dissolve the yeast and sugar in it.
- In a bowl, mix the flour and salt well. Make a hole with a spoon and pour the water and oil into it. Mix well with a spoon until the mixture comes together, and let the dough rest under a clean towel for 15 minutes.
- After that, knead the dough on a surface sprinkled with flour, fold and shape it into a ball several times for about 5 minutes.
- Let the dough rest again in a bowl, covered with a clean and dry towel, to prevent a crust during rising.
- Meanwhile, prepare the meat filling: mix the oil, vinegar, salt, pepper and spices in a bowl. Place the mixture in a large box, cut the fillets in half or thirds, and place them in the mixture. Color them and soak for about 15 minutes for soft and delicious meat.
- Lightly chop and slice the onion, skewer one half of the onion, and finish the meat with the other half of the onion.
- Bake in the oven at 180 degrees for 20 minutes.
- Continue with the pita, divide the dough into 8-10 pieces (depending on the desired size), carve them into balls, and let them rest for 5 minutes.
- Make pitas with a diameter of 15 cm and a thickness of 3-4 mm.
- Meanwhile, heat a pan and fry the bread on both sides until the pan is very hot.
- Cut into a salad to fill the bread, add the meat that was grilled like a kebab, and combine with cucumber, cherry tomatoes, chopped red onion, mint leaves and a little tahini.
Oatmeal bread in the microwave:
Ingredients for bread:
- 50 grams of oats
- 2 EGGS
- 1 tablespoon baking powder
- Salt
- pepper
For the sandwich:
- Pastrami or grated/sliced cheese
- Rocket salad
- Olive oil
- sweet mustard (optional)
Instructions:
- Grind the oats.
- In a separate bowl mix with the eggs.
- Add the dry ingredients to the eggs (oat flour, baking powder, salt and pepper), mix well and microwave on high for 2-3 minutes. Leave to cool.
- Cut the bread and fill it with pastrami or cheese, rocket salad or whatever you want in your sandwich.
- Spread the two slices of bread with oil and roast them on a pan.
- When they are ready, serve along with some mustard or your favorite sauce.
